Chicken & Rice Curry

Ingredients (single serving):

  • 1/2 cup instant riceIMG_6998
  • 1/4 cup freeze dried veggies
  • 7oz pouch chicken
  • 1 packet chicken broth
  • 1 cup water
  • 1/2 tsp curry powder
  • dash cumin
  • salt/pepper
  • shaved almonds
  • dried cherries

At home:

Combine rice, veggies, curry powder, and cumin in plastic bag. Keep almonds and cherries separate to keep almonds from getting soggy.

In the backcountry:

Put rice, veggie, seasoning mix in the pot. Add the chicken, broth, and water. Bring to boil and simmer unti water is mostly gone. Salt and pepper to taste. Remove from heat and top with almonds and cherries.
